HACCP stands for Hazard Analysis and Critical Control Point. It is a preventive food safety method built on seven principles: conduct hazard analysis, identify critical control points, establish critical limits, monitor CCPs, define corrective actions, verify the system and keep records.
For Lebanon food operations, HACCP is useful where product safety depends on controlled cooking, cooling, chilled storage, allergen handling, sanitation, water quality, packaging integrity or prevention of cross-contamination.
